Kombucha - Ringing in 2018 on a healthy note!

If you haven't heard of Kombucha by now, you may be living under a rock...don't feel bad, I've been there too (many times in fact) so you aren't alone in that shadowy, protected place. But since we at Hub Town are fermentation geeks in the beer industry, it's only fitting that we know a bit about this very popular fermented "health" drink that originated in the far East over 2000 years ago but only hit the market for mass consumption a handful of years ago...so let me introduce you.

Kombucha is a fermented tea beverage known by the Chinese as the "immortal health elixir" with its many benefits to the heart and brain but mainly the gut. The magic of this super drink, lives in the SCOBY...a Symbiotic Colony of Bacteria and Yeast that forces the fermentation of the tea (and sugar) solution. Besides its tangy or even tart flavour and the slightly effervescent tingle, your tongue is not the only part of you that will dance with joy when you drink kombucha...your gut too will thank you because this drink contains the healthy bacteria we all know as Probiotics, that line our digestive tract, protecting us from illness by fighting infection and essentially supporting our immune health. And since up to 80% of our immune system is in our gut, it seems fitting that we do all that we can to support it.

Among other things, one of my own biggest immune killers has been chronic stress. As a parent to a house full of teenagers, full time employee at my engineering firm and entrepreneur working to build a business and a brand while planning a microbrewery, I have (no surprise) burned the candle at both ends.

So, my goal in 2018 (or new years resolution as some will put it) is to help my body find it's way back to good immune health by changing just a couple small things that are within my control...1) creating boundaries around my work/life balance - yes I will still have to work a LOT of hours, but setting appropriate start and finish times may be in order...and 2) brewing and drinking kombucha daily, since my immune system needs the help.
